Wobbly cake





Made this cake today also. Very happy that it turned out well.
Actually I wanted to do a mocha cake but when the sponge cake was done, it turned out thinner than I expected. Hence I have to changed and do something else instead. Luckily I bought a cake ring some time ago from KK. First trial. It came out beautifully.
Cake :
Ingredients
180g sponge cake mix
3 eggs
45g butter
45ml milk
Method
1. Preheat oven to 180C.
2. Beat sponge cake mix, milk and eggs with high speed until light and fluffy.
3. Mix in butter and beat till mix.
4. Spread batter into tin and bake for 30 minutes.
I cheated in this recipe.
I used my pudding recipe to do the top portion.
Ingredients
100g pudding powder
100g sugar
1000ml water
Method
1. Boil all 3 until dissolved.
2. Leave to cool. When cooled, pour on top of cake.
3. Chill in fridge before serving.
I will try to change the pudding to custard the next time I do this.

Pandan Chiffon Cake


This recipe is taken from Prima's website with some slight adjustments.
Ingredients
A.
100g top flour
1tsp baking powder
B.
1 tsp pandan paste
100ml milk
4 egg yolk
35ml corn oil
50 g sugar
1/4 tsp pandan flavour
C.
4 egg whites
1/4 tsp cream of tartar
50g castor sugar
Method
1. Preheat oven to 170C.
2. Mix B and whisk with a hand whisk.
3. Sift A and mix into 2.
4. Beat egg whites and tartar at high speed until foamy. Add sugar into it.
5. Add 1/3 of C to B and mix using a hand whisk.
6. Fold this mixture to the remainder C.
7. Pour all into chiffon tin and bake for 30 minutes.
8. As soon as it is out of the oven, turn it over and let it cool.

Lucky Muffin

I did this with the kids today.
I named it Lucky Muffin.
Why? The reason is I am trying to get rid of a box of chocolate which I dont want the kids to eat.
Hence I told the kids we will make some lucky muffins with chocolate stuffed inside them.
Whoever picked the one with chocolate will be lucky.
The base of the muffin is butter.

Ingredients
100g sugar
120g butter
2 eggs
160g self rising flour

Method
1. Preheat oven to 190C.
2. Mix all into a bowl.
3. I use a spatula and mix it all in.
4. I weighed out 30g per cup and bake for 30 mins.

The smell is just wonderful.

Butter cake

This cake made me quite a lot of money years ago so it is only fair that it be the first entry.

Ingredients
4 eggs
250g butter
1 cup evaporated milk
1/2 cup sugar
3 cups self rising flour

Method
1. Preheat oven to 180C.
2. Beat butter and sugar till light.
3. Add in eggs, 1 at a time.
4. Add in milk.
5. Add in flour.
6. Bake for 50 mins or until cooked.

The funny thing about this cake is that it will taste best when eaten the next day.
